- 3 cups cooked boneless chicken sliced
- 3 tomatoes, chopped
- 2 mangoes, peeled and sliced
- ¼ cup olive oil
- 2 tbsp lemon juice
- ¾ cup Easiyo yogurt
- 2 tbsp mayonnaise
- 2 tbsp fresh giner, peeled and grated
- 3 tbsp fresh coriander, chopped
- salt and ground black pepper
In a large bowl combine the chicken, tomatoes and mangoes.
In another bowl whisk together the oil, lemon juice, yogurt, mayonnaise, and ginger.
Pour over chicken and gently toss, adding coriander. Season to taste.
Spoon salad onto platter and garnish with coriander sprigs.
When ripe and ready for eating, a mango should feel really soft when it is squeezed gently by hand.
